Give your salad a south of the border vibe with a savory combination of beans, corn, avocado and salsa.

Ingredients

1 red bell pepper, cut into 1 inch pieces
1/2 cup red onion, chopped
1 1/2 cups cooked or 1 (15 ounce) can no-salt-added kidney or pinto beans, drained
1/2 cup corn kernels, cooked
2 medium tomatoes, cut into 1 inch pieces
1/2 cup jicama, peeled and cut into ½ inch pieces (see note)
1 small avocado, cut into 1 inch pieces
2 tablespoons fresh cilantro, chopped
1/2 cup Dr. Fuhrman's Tex-Mex salsa or other low sodium salsa
8 ounces mixed salad greens

Instructions:

Combine all ingredients except salad greens.

Place salad greens on serving plates and top with vegetable-bean mixture.

Note: Jicama is a root vegetable that resembles a large turnip. It has thin brown skin and crisp, juicy, white flesh that is mild in flavor. Jicama is native to Mexico.

Excellent! I added cucumber and used black and pinto beans, salad greens were chopped arugula, garlic scraps, onion and lemon juice.

I didn't have any jicama, but felt the salsa made this meal too tomato-y for day 1 meal.  I added fresh lemon.

This salad is so easy to put together!  I didn't have jicama so used a cucumber instead, like Susan did.  It was great!!  We really enjoyed this salad and will definitely make it often!

The best!  I didn't know what Jicama was but was able to find it at my local international grocery store.  So good.  Definately one of my very very favorites.

Delicious, pretty, and very satisfying. Next time, I will make it earlier in the day so that it will be well-chilled. Made about 4 servings, rather than 2.

I always read comments before trying a recipe.  I saw some helpful ideas.  I used 2 cans of black beans and when I cut up the avacado I squeezed an entire lime over it in a separate bowl and tossed before adding it to the other veggies (I'll use 2 avacados next time).  I too put cummin in it and some low sodium taco seasoning and a dash of garlic salt.  It will be super yummy on romaine heart "boats" for lunch this week.  It does make a lot so invite your SAD friends over to have lunch!  They'll love it.  (Have some whole grain tortilla chips on hand too!)

This recipe made 4-5 servings.  I used low-sodium canned black beans.  This was the first time I tried jicama -- it was crunchy and pretty good!  This is the end of the growing season where I live and I got a couple of local tomatoes that were ripe, but the flavor was amazing.  I'll be happy to use this recipe in the future, whenever the recipe recommended on the aggressive weight loss plan doesn't look quite like what I want.

This is a tasty, filling, fast, go-to salad for us. I often use the frozen roasted corn from Trader Joe's, which adds extra flavor. I squeezed a lime over the top when I added the salsa. This salad has all the ingredients we like best in this household.

I just tried this salad and it's definitely a keeper!  I really liked the beans ( I used a 3 bean mix) and avacado in the salad.  I unfortunately didn't have and corn, but I'll add that next time.  I also put it over a kale, spinach, and cabbage mix.  Yummy!

This was awesome. As soon as I saw it, I knew what I having for lunch. I added potassium chloride, and used plain bottled green chiles from Costco instead of the salsa. I used black beans. Very good. The portion was perfect for my 5 quart salad/green bowl I usually eat.

Made this recipe and we all loved it! I added cumin, ground garlic, lemon juice and hot chili flakes and it turned out simply delicious. Instead of corn chips I used celery sticks , very tasty.

I just made this for dinner tonight. I didn't know what jicama was, so I just skipped it. I also thought black beans would be much better in this so that's what I used. Glad I did, really like their flavor. I also used a mild black bean & corn salsa and 1 can of petite diced tomatoes (no salt). As someone else stated, this really does make quite a bit, but I'm not complaining, we'll eat this again tomorrow for lunch or dinner. It's a nice dinner for a warm night instead of soup.

As much as I hate to be the dissenter, I found this recipe to be just so-so. First of all, this is enough for WAY more than just two people even as a main course, let alone a salad. (Yes, I know, the salad IS the main course, but then this recipe should be classified as such.) Furthermore, it simply isn't a very pleasing taste, as least with red kidney beans as the legume of choice.

Still, as a man who is still trying to kick the habit of eating garbage (A.K.A., the standard American diet) and who keeps swearing he's going to find a way to eat beans, this recipe delivered as advertised.

I just made this salad and it was very good. I didn't have any jicama, so I substituted chopped cucumber. I also used a little fat and dairy free ranch dressing, because I was craving something to approximate sour cream.
